Email address books or "Contact Lists" have the option to have "Display Names" as well as straight email addresses.
For example, if my email address was mflax@myisp.com then my friend might have entered that in his address book or contact list as mflax@myisp.com but also added MarkFlax in the "Display name" field, so when he gets an email from me the Sender looks like <MarkFlax>mflax@myisp.com
So your recipient may have "Ray" in his address book or contact list for your email entry.
