Audi A3 Overheating/ Coolant problems

I have a 1998 Audi A3 1.6, which i drive approximately 100 miles per day. Recently its started to overheat & lose coolant when i drive over 70mph (which is about 10 mph slower than the rest of the roads on which i drive).
I've had the car serviced regularly and the local dealership garage told me i had a leaky radiator which would cost over 500 to replace.
I thought this too steep and so took it to another VW Audi 'specialist' who checked for leaks using UV dye. NO LEAKS WERE FOUND!! (He said the radiator was perfect and there was no point in changing it.
He checked for signs of head gasket problems ( coffee bloom in oil cap or water from the exhaust) but nothing aparent.
When I described the problem as below, He thought the pump or thermostat were sticking, so both were replaced.
Unfortunately the problem still persists!!
When I'm driving, the temperature will generally not rise over 60, but when driving on fast motorways, it will occasionally shoot up to 90 before (after a few minutes) dropping instantly to normal.
If this was an occasional problem I could probably live with it, BUT I now have to top up the coolant for even the shortest run, and today (for the second time) the temperature went off the scale and vented all the coolant.
P L E A S E !!!! Could someone advise me what to do as I dont want to throw money at this problem forever and it appears that the local 'EXPERTS' either don't have a clue or want to rip me off!!!!!
