New AVR and upconversion questions

So I am putting in a whole new surround sound system in my house. I am about to buy the lc-60le650u sharp 60'' tv and am going to wire my living room with surround sound (I am doing a professional install myself).
I am putting in wires behind the wall and am going to be drilling through several studs. I only want to run 1 hdmi cable from the receiver to my tv, but I still have some antiquated dvd players and the like that I will be connecting to the AVR. This means that the AVR will have to upconvert to hdmi, but I am not sure exactly what it will upconvert. I am looking at the Yamaha RX-V667 and the Onkyo TX-NR609. I don't have a lot of money left to spend on the receiver, so I am going to go used or refurbished (I have a max budget of $300 for the receiver after tax/shipping/whatever else). I will take any suggestions you may have on which receiver I should purchase.
My main question is this - what cables will I have to run between my AVR and my TV? I will be running these cables in the wall, so I really want to only run 1 hdmi cable. But... I will be hooking up both composite and component devices to the AVR. Will either of the receivers I listed above upconvert these signals to hdmi? or will I have to run more cables behind the wall? Both of these receivers are supposed to be able to upconvert, but I am not sure exactly which signals they upconvert to.
I need to know which cables I will have to run from my AVR to my TV. It is a smart TV, so I am assuming an ethernet cable and an hdmi cable, but will I need to run any others?
I know it is a confusing set of questions, but I am in need of some help here. Thanks for any input you may have.
