Help setting up TV/Home theater system

Apologies for the repost - I posted this in the Samsung forum but no one has replied.
I just yesterday upgraded my home system. I had an HD CRT TV that worked fine, but wanted bigger, flatter, etc. and I thought I needed more inputs since I used to have to unplug the Roku to use the Wii and vice versa. I ended up complicated things WAY more. I think I screwed everything up.
previous system -
Samsung 30" widescreen TXN3075 (crt tv - no hdmi)
Samsung Home Theater HT-P38 (no hdmi)
peripherals -
Scientific Atlanta 3800HD DVR
Roku box for Netflix
Wii
dock for XM satellite radio receiver
Cable and Home theater used component cables to hook up to the TV.
All sound came through the Home Theater - whether it was Wii, Roku, DVD,
TV, etc. The Wii and Roku only used composite and S-Video, yet the HT powered the audio.
So I got a new large LED backlit TV and a new home theater for DVD and surround sound.
Now, none of the HD channels are HD - everything is letterboxed and stretched. Time Warner is coming on Wed. but I have no idea what's wrong there - everything is set for 16:9.
I didn't really want a new home theater - but thought I need the 1 component on the TV for Wii - and my old one didn't have HDMI.
New set up -
Samsung UN40B7000 LED-LCD TV (4 HDMI, 1 component)
Samsung Home Theater HT-Z420
same peripherals.
Cable box, HT, and Roku are hooked up to the TV with HDMI.
Only DVD gets sound through HT unless also use optical audio to cable box.
Then Roku has no sound through HT, and the Wii won't either, and I don't know if the radio dock will work yet either.
I would like all peripherals to have sound through HT. How do I hook this up?
