Vid streaming quality issue

I'm using a legria hf m41 to record guitar tuition. The quality initially appears okay on my computer through Quicktime but the intent is to stream the vids from my server (BlueHost) through Adobe Acrobat Pro x( interactive document). What i see is artifacting type behaviour on the 6 guitar strings - being horizontal and close together. They appear jagged and tend to strobe. I'm a novice so I'm using the AUTO mode and an umbrella light ( which is more than sufficient for lighting levels). Do I -
A.fiddle around on a manual setting and hope for the best ?
B. assume it's a server issue ?
C. look into a more powerful camcorder?

Any thoughts would be welcome.

This is a well known effect. See item 2 at http://www.uliveandlearn.com/lessons/lesson.cfm?lesid=455&pg=1 and my question is this.

Do you know why they wrote that?
