Need help with Canon EF verus EF-S for telephoto

Folks,

I have a Canon Rebel EOS 500D with a 18-55mm lens. I am thinking of buying a 75-250+ mm lens for taking photos from a distance.

As I understand the camera can use both EF lens as well as EF-S lens. Is this correct?

Also, as I understand, EF-S lenses take care of certain problems associated with wide angle. However, as I am just focused on telephoto, does it make any difference if I go with EF?

EF Lenses

EF lenses are primarily designed for full frame cameras, namely the 1D and 5D series. All of Canon's best telephoto lenses are only offered as EF lenses, and are designated as L lenses (as in Luxury). The benefit to using an EF lens on a crop frame camera like the 500D is that the camera is using the sharper middle portion of the glass. There is less distortion as well. The downside is that EF lenses are bigger, heavier, and more costly.
