Can I use ???? Mobo and CPU

I was wondering if any can tell me wether or not if I can build a NAS system with a regular motherboard and CPU. I recently upgraded my gaming rig. I put in a new mobo and CPU. mobo is an Asus rampage III formula and the CPU is a I7 950. I will be buying a raid controller for the NAS setup but I was hoping that I can save a little money and recycle some of my components.

Most PCs tap the power for over 100 Watts and a simple NAS may run about 20 or less Watts. Such small things are not really a NAS but a server.

Would I be able to use windows home server? Never built a server nor a NAS I want the concept but at the easiest control. I was looking at other server OP's systems but I'm looking for the easiest operating system to use and maybe upgrade to something with more control and function later. I have a lot of ripped dvd's that I want to be able to stream from the server and I want to be able to access from outside of my network as well. For the power consumption, am I able to turn off features to drop the wattage.

Your choice of OS.

Many need simple so they use a Window OS. Almost any will do fine.

As to power, I've yet to see most servers get much below 100. At home I tried that for years and finally settled on a current gen netbook that sips 7 Watts on average. And it's running Windows.
