Illegal Excess Of Emails Through Wireless NetWork?

Can a wireless network administrator illegally access emails using iphones ( Apple)?
I witnessed first hand with owner of my old iphone how my inbox still appeared in inherited iphone. Emails automatically updated when within range without the need for a email password.
Makes me wonder whether unethical network administrators can access emails on wireless networks by using simple email address of employees.
Additional question is whether issue can be solved from hand piece configuration , net work or both?
Maybe iphone settings were not set properly from start? Even if do, can unethical network administrator still illegally access emails through the use of an iphone?
