Blu-ray formats?

I see there are different formats such as Widescreen, Fullscreen etc. Is this only for DVD's or is it also for Blu-ray disc's?

No, any screen ratio can be used for any type of disk.

Don't confuse screen ratio (you used the term format, not a good choice of words; not absolutely wrong, but it could cause your confusion) with disk medium (DVD vs BluRay) or even with file format.
I would imagine that the more byte hungry ratios and resolutions would gravitate toward the disks with the higher capacity disk types. But as long as your file can fit on the selected disk type, who cares?
Also, many more people have DVD players than the BluRay players. So you might want to consider your audience.
I am pretty sure that any BluRay player can also read any DVD... not the other way around.
No DVD player can read any BluRay disk.
