Outlook vs Outlook Express

When I setup my home computer, I elected to go with Outlook Express instead of Outlook. I really didn't need all the extras for my home computer that Outlook provides at the expense of a bigger footprint. I'm using the XP Start menu so Outlook Express is always there in the top left portion of the menu. Occasionally though the system substitutes Outlook for Outlook Express. I usually notice this when I click on the Outlook entry and I get a window that tries to install Outlook on the system. when I back out of this and click on the Outlook Express entry, I get a message that says Outlook Express is no longer the primary E-Mail program. Is there a way to fix this? How do I stop the system from substituting Outlook for Outlook Express on a regular basis? Don't know what the interval is, haven't really bothered to check, but its starting to get annoying. Any ideas out there?
BTW: My system is Win/XP SP2 Media Center Edition
