You can delete the entry in the All Programs list. simply right click the entry and choose delete. It is only a shortcut and not the full program itself. But you need to choose which ones you delete as deleting shortcuts to programs you use or intend to use means you have to find other ways to open those programs.

Or, you can organise your Start > All Programs list. Right click on the Start button and select "Explore". A Windows Explorer window will open with the Start menu highlighted for your own XP account. Here you can create new folders to group together similar program types, (the same as Accessories does), and then drag the program shortcuts into those folders.

If you are an administrator and right click Start and select "Explore All Users", you will see a Windows Explorer highlighting the Start menu that all users of the computer can see, and not just those limited to your account.

This is a pretty simple solution. Ever since windows 95 when programs started getting installed on local hard drives and shortcuts would get made everywhere else, you can delete any program shortcut on the desktop or startmenu without any danger of losing the program (99.9% of the time.) In your case, you have 2 options, 1 is easy and the other is a bit more exact. 1) Open up your Start Menu, go to All Programs, and anything you want to delete, right click it and select delete. If you cant right click, get to the start menu advanced properties and enable dragging and dropping. 2) Go to C:\Documents and Settings\[Username]\Start Menu\Programs and delete what you want. If its still there, go to All users at the [Username] part. Both of these methods can be checked, while deleting, a dialogue will come up asking if you want to delete this shortcut, and says the program wont be deleted. Good luck!
