You can avoid Outlook with all mobile opertaing systems...
The dependency on Outlook has been eliminated, though one of the newer trends is to not provide desktop syncing options by default. In the case of the Palm Pre and Pixi, you'd need to purchase a third-party application as noted on Palm's product page. In other cases, such as Windows Mobile, Outlook syncing is provided by default but you can choose a third-party application as well. Regardless, you can typically sync with Outlook, Outlook Express, Windows Live Mail, Palm Desktop, Lotus Notes, and more regardless of which device or OS you choose.
