Super-cooled water freezing on queue - it takes a minor shock to initiate the formation of the first ice crystals. Once those form, it's a cascade, and the whole bottle freezes

As I recall, it's a think about that last calorie of heat that needs to be removed in combination with agitation. This is just from memory but I recall something about 1cc of water raising or lowering in temperature at the rate of one calorie per cc until reaching the freezing or boiling point. To overcome the threshold at those temperatures require a calorie addition or subtraction much greater than 1 so that cc of water won't go from 32 to 31 degrees by removing only one calorie but a while lot more. It's physical state during that period is quite unstable. As such, a small amount of agitation is all it takes to begin the crystallization process. It's somethin' like that anyway. happy
