Mini Display Port and HDMI configuration question?!

So I have a Sapphire Radeon 6970

This card offers 1 HDMI out, 2 Mini DisplayPort out, and 2 DVI out (1 single link, 1 dual link).

And I plan on buying two new monitors for it to output to:

Each of these monitors can receive 1 HDMI, 1 D-Sub, and 1 DVI.

What are the best connection options for highest quality/resolution?

I've never used DisplayPort before, so I'm hesitate to invest before I know for sure what I need to be doing.
