Is unplugging the AC adapter from my laptop ...

enough to stop Vampire Power? Or am I supposed to unplug the adapter from the outlet itself?

You mean things like the standby power used by almost every electronic device these days, then you would need to unplug the AC adapter from the wall. It may be using relatively little power compared to if it were plugged into the laptop, but many have some kind of LED indicator light on them which tells you they are using power.

Vampire issues

Any AC adapter, etc. that remains plugged in continues to do whatever its support to do even if the device it powers has been disconnected. Unless, its a "smart" adapter or similar maybe, but even then just keeping that little LED lit is sucking power. Totally unplug to be 100% sure when device isn't needed.

will stop the vampire power. if you want proof, feel your power brick. now unplug your laptop for an hour or so and feel your brick. it will be cold since it won't have drawn any power recently.
