So I have been scouring the Android market, and the internet looking for a non-root-your-phone answer to that very question and everything I've found points to the only way to have access to really delete the pre-installed apps is to root your phone. Officeninja had it right though, rooting your phone will void the warranty, and theres always the possibility of "bricking" your phone if the root is interrupted, or done incorrectly (or it just could anyway).
The best thing you can do before choosing to root is find out the best way to root for the Droid X specifically, and there are many "one-click" kits that basically do all the dirty work for you and lessen the chances of you doing it wrong (but not foolproof). cnet has a good video "how to" as a starting place.
Once rooted, you will have "super user" access to basically toy with your phone in unlimited ways including getting rid of those pesky pre-installed apps. But also be aware that, like choosing to download unauthorized apps, there are risks to downloading apps that also get that root access. Such as if you download an app that is malicious it can completely take over your phone and do anything. Luckily no known apps can do this but the possibility is there for someone to exploit. So just be extra cautious what you download to your phone in that case.
I personally haven't rooted my phone and don't plan to in the near future; but if/when I decide to do so the pre-installed apps will be the first things to go. Till then I just live with them and it hasn't taken away from the experience for me.
Good luck no matter what you do. And here's hoping that either Google will update Android to allow us to just delete those apps, or someone comes along and makes an app that deletes everything and that doesn't require rooting your phone.
