Tablet thoughts... (Android/Windows 8.1/iPad?)

My wife wants a new tablet for her birthday (Jan 8th, so I can shop AFTER Christmas and hopefully get a deal). I'd like to keep it under $400, if possible.
We're open to pretty much any suggestions, but she doesn't really want an iPad (not an Apple hater - I prefer OS X - just not very impressed with iOS 7 and we're all Android otherwise for our mobile devices) and ONLY want a 10". I currently have a Nexus 7, but she doesn't like it - says its too small (and it kinda is).
She really likes the multi window and S pen on the Galaxy Note 10. However, I can't spend $550 for the 2014 edition. How do you feel about the 1st gen Note 10.1 for $399?
I would rather go for a Nexus 10 - better screen and similar specs otherwise; but mostly, I prefer vanilla android and Kit Kat. Would she really miss those before mentioned features? I'd love to sell her on the Nexus; she IS impressed with its screen / thinks the 1280x800 on the Note 10.1 is lackluster.
Any other Android suggestions? I'd thought about a Tab 3 as a cheap alternative, but I just don't see it being worth it (mostly 1GB of RAM is a MAJOR turn off to me).
Finally, what about a Windows 8.1 tablet? I like the idea of being able to run "anything," but how are they performance-wise? I was thinking the Asus T100 or the Dell Venue 11(?). My biggest concern would be is usability - how easy is it to use standard apps on a 10/11" touch screen? And what about touch friendly apps? Is the Windows app store there yet?
