Active Sync: One Device lists Full-Backup Option, other NOT

Im wondering if the fact that one smartphone has MS Exchange Server Configured makes a difference whether Active Sync will list a BACKUP option or not. The Mobile 6.1 device that has Exchange Server does NOT list a Backup option, but the smartphone running Mobile 2003 SE (4.21) that only Sync's with the PC (and no ES), DOES have a Full Backup option. Just to further clarify, the 6.1 connection's backup option is NON-EXISTENT (vs. just dimmed.)
I need to backup the entire 6.1 device. Should I temporarily delete ES, or will that not make any difference?
If it does NOT make any difference and Windows Mobile is on both devices, it would be conclusive that the option depends exclusively on the smartphone? (But I think this latter possibility shouldnt be the case.)
