How much re-do of website hurts ranking?

I really want to do some changes to my website, but am getting lots of new customers and rank on the first page of Google and Yahoo for my product.
I've heard that if you change your website, you can loose your ranking. I've also heard that if you never change it, you will lose your ranking. We do weekly updates, so I'm wondering how much change triggers a loss of ranking. (I did lose my first page ranking when I did the last major re-do of my site, but it had to be done.)
I would think you could make incremental changes like photos, "delete this", "add that" kind of thing and not hurt anything, but I really don't have a clue. I am also reluctant to believe someone who is trying to sell me something. .
How do you find out (or figure it out)?
