I dislike the music that is played at my fitness center. Unfortunately, it is played so loudly that it almost drowns out the music I listen to on my portable music player. If I were to use noise canceling headphones, would the volume of the center’s music be reduced? Also, is there much of difference in the quality between the $50 and the $100 headphones?
Yes. I've tried a Bose and others. The cancelling did differ from each one.
But I don't use such since they eat batteries.

I have the Sony MDR-NC11s. They're the in-ear kind. They're called noise canceling headphones but they're really noise reducing. They get rid of background noise...and do a good job of filtering out machine noise. I use them at work and they get rid of a lot of the general noise (machine hum, etc.) but if someone is having a conversation near me, it often seems slightly clearer than other noises around me. An over the ear model might do a better job, but the way the headphones work is to cancel the white noise around you...so the music at your gym would probably not be filtered otu.
I recommend the Shure e2c's http://store.yahoo.com/efunctional/e2c.html
They aren't noise cancelling, but are canal phones, which go in your inner ear and make a seal blocking almost all outside noise. With them on you can't hear anything but the music. Great isolation.
I have the same problem at my gym, they play the worst music! You have two options: ear buds or noise cancelling: I bought both purchases for a steal at an online AV store: earbuds: http://www.alltecstores.com/ALLTEC-Headphones-Personal.html for $3.32 you cant beat that skull candy sells for over $30 bucks and it is the same thing! http://www.alltecstores.com/Headphones/Coby-Electronics-Coby-Noise-Cancelling-Earphones-with-Remote-Control-CVE195-38858.html and noise cancelling for $21.80! Seriously good deals!
