And with great programs like HandBrake and VisualHub, converting videos for Apple TV consumption is a snap. Also, I've recently discovered MetaX located at http://www.kerstetter.net/page53/page54/page54.html that tags those MP4 movies the way that iTunes likes them. HandBrake even hands off newly-ripped DVDs to MetaX for tagging and features Amazon.com integration to make sure you get the proper info and album art.
Note that these are all Mac programs (ok, HandBrake is cross-platform) and the latest version of MetaX is Leopard-only.
