I am currently a 3rd year Physics student in a Canadian University, and am being introduced to a variety of mathematical programs. These include Matlab, Mathematica, and Maple. My question is this, after school which of the three programs have remained useful in the outside world? Which program or programs are actually worth my time to learn? Experience based advice would be greatly appreciated.

You'll discover that which you use is likely driven by the job you are at. That is your new workplace will have selected one or a few to use and share documents and simulations with.
Unless you are aspiring to do some independent research then write a book, having your own copy is a fairly expensive proposition.
