What is better to use: a DVI to DVI cable or DVI to HDMI cable (DVI out on cable box, HDMI in on the TV)? Thanks.

You question is a little confusing. Your cable box has a DVI output? Your TV has HDMI input? If this is correct then you use a DVI to HDMI cable. John

By the same token, can I use a converting cable to connect my older LCD-HDTV (with a DVI input) to a newer HDTV cable box (with an HDMI output)?

I believe that when you connect a DVI to HDMI or HDMI to DVI, you will not be getting the audio signal that comes as part of HDMI. DVI is video only (traditionally meant for computer connections) and you will need to run separate audio connections.
