Could anyone tell me what application(s) will capture streaming video and audio on a Mac/

At the office we use the PC for that function and toss the result over to the Mac. We use CAMTASIA.

WireTap Pro (ambrosiasw.com) is a great program to capture streaming audio. It "hears" everything that plays on your desktop, records it, and saves it as a .aif file for iTunes to burn or use. There is a similar program that captures any video that plays on your desktop, but I forgot what it's called. Both of these programs do not require that you first save the file, they simply "see" the desktop and record audio or video as needed. The video program saves the files in a low-resolution MPEG movie, but something is better than nothing. If you wander over to the Apple website and click on Support>Discussions>iMovie5, this video recording program has been discussed. I have WireTap Pro, so I know it works very nicely.
