New to digital cameras. I'm looking for something easy to use which will fit into my pocket and 5 MB. Self timer and good red-eye reduction also important.
Casio S500 felt really good in my hands, but no self timer (any way around that?). The casio Exilim EX-Z57 gets better reviews as having a better pic and has a self timer. The S500 has electronic...shake compensation.
Panasonic Lumix's look promising. Reading reviews there is the Lumix DMC-LZ2 or the FX-7/8. The two lumix have better the anti shake compensation.

You should eliminate the Panasonic FX7 from your list as it has a very short battery life which was corrected in the FX8.
You didn't mention it, but the FX9 makes even more improvements, such as a more readable LCD.
The Panasonic LZ2 is not such a small camera and has a 6X optical zoom. It seems to offer more for the money.
The two Casio cameras would be a toss-up when comparing the two.
The Panasonics offer a better flash than the Casios.
The Casios offer less shutter lag than the Panasonics.
You are going to have a difficult time choosing.

I've had the FX 8 for a month.
As you might know, FX 8 has improved on the FX 7 by increasing the number of pixels on the 2.5 inch LCD, and increasing battery life considerably, by way of improved electronics and battery.
As usual, Panasonic products provide more than you expect.
It has the optical image stabilization which has helped when taking indoor pics without the flash.
I also took a pic last week outdoors in the evening-dark of a group of people with flash, with very favorable results (the FX8 has an AF assist lamp)
