What is the harm, or risk, if any, in leaving files un-hidden?

Minimal. Main risk is you become tempted to mess with things you shouldn't or accidentally delete something you shouldn't.
There's no harm in leaving your personal files unhidden, unless you're concerned about someone else opening and reading them. But the system files (the files that are used by the OS) and the registry files should always be hidden, so that you, or someone else, don't delete them by accident when cleaning out your system.
If you're a computer newbie and have no need to access these files, leave them hidden. If you have a reason to access the files very rarely and tend to be careless then unhide them when you need to and then hide them again. But if you're finding you have frequent need to gat at these files and are growing confident that you won't mess things up, then there's no reason not to leave them unhidden. There is no danger inherent in the unhidden state other than the danger of someone accidently moving, changing or deleting them.
