With the Macbook and MacBook Pro, is the graphics upgradable and if it is, with what/how much. And how upgradable is the memory?

But look at other laptops so that's an area people learn quickly as they move from desktop to laptop.
About RAM, all too easy to figure out. Look at crucial.com and put the Macbook in.

2GB standard, 4GB ceiling
up to 250GB of storage, 300GB on the 17-inch model, non-removable, currently
256MB or 512MB NVIDIA 8600GT graphics cards
15-inch or hi-res 17-inch screens
You make the call. The only removable components on the regular MacBook are the hard drive and RAM. The current MacBook Pro only allows the RAM to be removed without voiding warranty. Be advised new revisions are expected in the coming weeks. Keep an eye out.

they are about as upgradeable as most other laptops out there

The graphics controllers (or onboard graphics chip) are not but this is no different than any other laptop. The hard drive on the Macbook is particularly easy to upgrade as it just slides out when you open the battery compartment.
